LUCUMA POWDER
Lucuma is the fruit of Pouteria lucum, a tree belonging to the Sapotaceae family, native to the Andean area of Peru . It can reach up to 15 meters in height and up to 200/300 fruits per year, if grown in areas between 500 and 2500 meters above sea level with a temperate climate; In fact, it does not tolerate frosts.
Its cultivation dates back to pre-Inca times , reaching its peak during the Moche era. During the pre-Hispanic era, Lucuma was one of the main ingredients of the diet of the aborigines of the valleys, together with corn, legumes and guayaba, as well as quinoa and kiwicha in the higher areas.
The fruit of Lucuma is spherical, with an elongated end. It has a green skin very similar in color and texture to that of the avocado, as well as its central brown seed. However, its pulp is floury and has an intense yellow ocher colour.
Its pulp is used fresh or dried for its conservation and use "out of season". Once dried, the fruit is easily reduced to a thin, very sweet and nutritious flour.
It is in fact rich in beta-carotene , one of the plant pigments (red, yellow or orange), a primary source of Vitamin A and a powerful antioxidant.
It also contains B vitamins, including Vitamin B3 , or niacin, which is part of the so-called water-soluble vitamins, those which cannot be accumulated in the body, but must be regularly ingested through food. Vitamin B3 is essential for cell respiration, promotes blood circulation, acts as a skin protector, and is very useful in the food digestion process.
Finally, it is rich in mineral salts, fiber and carbohydrates .
Despite its very sweet flavour, it has a low glycemic index and very few calories , around 180 per 100 g of fresh product. For this reason its powder is also used as a natural sweetener with a low glycemic index, as an alternative to traditional sweeteners.

Uses: It is currently used in gastronomy mainly for the production of desserts (creams, cakes, ice creams...), such as the famous and delicious Suspiro a la Limeña, but it is well suited to being included in the preparation of almost all sweet recipes.
