Legend has it that it was donated by the stars to a young Aymara who was guarding the fields at night, to feed his people.

Quinoa belongs to the Chenopodiachee family, the same as spinach and beetroot, but is considered

Quinoa (from the Quechua kinwa , quinua) is a pseudocereal , of the Chenopodiaceae family (the same as spinach and beets), which grows and is historically cultivated on the Andean plateau between Peru, Bolivia and Ecuador, around 2500 meters above sea level.

Highly nutritious, digestible and tasty, it is considered the rice of the third millennium for its versatility, even if, unlike rice, it needs very little water to develop and can grow at any latitude/altitude.

It contains all 9 essential amino acids that the body is unable to produce and must regularly consume, as well as more proteins than any cereal , making it particularly suitable for a vegan diet.

Furthermore, completely gluten-free , it is a tasty alternative to wheat for people suffering from celiac disease.

For all these reasons, the FAO, which declared 2013 the International Year of Quinoa, recognized it as a " natural food resource of high nutritional and dietary value, whose importance  is increasingly relevant globally in terms of food security for present and future generations" .

Furthermore, on November 23, 2014, Quinoa traveled into space with the Italian astronaut Samantha Cristoforetti, who wanted it among the "bonus" foods of the mission . Furthermore, considering its very high nutritional qualities, NASA has recently included Quinoa among the foods for the astronauts' diet and for the supply of future space colonies.

Before being processed, our quinoa is deprived of the pericarp, a thin transparent film that covers all the seeds and is rich in saponin, an alkaloid that normally gives it a bitter aftertaste, so it does not need any rinsing before use .

Ingredients: 70% organic white quinoa, 15% organic red quinoa and 15% organic black quinoa.

Allergens: May contain traces of nuts, sesame seeds and sesame seed products.

Uses: It can be used instead of rice for the preparation of first courses, soups and stews. Ideal too  for the preparation of fresh summer salads, but also meatballs and hamburgers and other fillings and breadings.  Finally, we recommend it to flavor your bread and pastry recipes.
