Cashews, or Cashew Nuts, are the seeds of the Anacardium fruit, a tree belonging to the Anacardiaceae family, native to Brazil, but now present and cultivated in various areas of the world. 

In fact, they are evergreen trees that adapt to different varieties of tropical climates. They generally have a modest height: the Western Anacardium in culture reaches 6–10 m, but there are also varieties such as A. Excelsum or A. Giganteum, which can exceed 40 m in height.

The fruit is composed of two parts: a fleshy part (considered a "false fruit"), which supports the actual dry fruit, which is in turn wrapped in a shell which is removed to make the seed edible. 

The word cashew derives from the Greek “kardia” , heart. 

Indeed, the ripe cashew fruit resembles the shape of a heart and cashews are good for the heart. They are, in fact, rich in monounsaturated fatty acids, which contribute to lowering bad cholesterol and preserving the health of the heart and the entire cardiovascular system. 

Cashews are also a very valid source of magnesium, essential for the activity and balance of the nervous system. It also has a relaxing and calming action, helping to prevent high blood pressure, muscle spasms, migraines, tension and fatigue.

Finally, cashews are rich in tryptophan (about 400mg per 100g of product), an amino acid, considered essential, because our body needs it, but is not able to synthesize it. Being a chemical precursor of seratonin and melatonin, it helps regulate mood and the sleep-wake rhythm.

Allergens: Cashews are an allergen pursuant to Annex 2 section III Legislative Decree 109/1992 and subsequent amendments. May contain traces of other nuts, sesame seeds and sesame seed-based products.

Uses: Cashews can be eaten either raw, as a snack, or used in the kitchen as an ingredient for succulent recipes. Thanks to their delicate and slightly sweet flavour, they can replace pine nuts in many recipes (such as in pestos, spinach or other sautéed vegetables, for example) or they can be used  in the preparation of cakes and biscuits. Cashews are also a widely used ingredient for the preparation of various oriental dishes, especially those of the Thai, Indian and Chinese culinary tradition.
