Theobroma cacao is a tree belonging to the Sterculiaceae family, native to South America.

The term Theobroma comes from the Greek θεός, god and βρῶμα, food: food of the gods. The specific name cacao, however, is the Spanish adaptation of the original Aztec name kakahuatl.

Between 3 and 10 m tall, this tree produces fruits, the cabosses, which resemble a rugby ball, around 20 cm long, with a peel ranging from yellow ocher to purple red, passing through different shades of brown, it has a series of longitudinal striations. Each fruit contains, on average, around forty beans (the cocoa seed) surrounded by a white pulp. 

The Mesoamerican peoples who first discovered it used it as both a food and a medicinal plant. Its nutritional and therapeutic characteristics, as well as its proverbial goodness, were recognized and appreciated to the point that its beans were also used as a currency of exchange. 

But what are these characteristics that have made this American fruit so famous and consumed?

Cocoa contains many flavonoids , beneficial substances that act positively on the cardiovascular system and are a powerful antioxidant capable of slowing down the aging of cells and preventing their degeneration, as well as counteracting the harmful activity of free radicals.

Cocoa also contains various neurostimulant substances , including caffeine and theobromine, which act on the nervous system, stimulating it. The consumption of cocoa then promotes the release of endorphins , also known as "natural painkillers". Finally, being quite caloric, it is an excellent energizer.
