The persimmon plant, Diospyros kaki , is native to eastern Asia and is one of the oldest fruit plants cultivated by humans, known for its use in China for more than 2000 years. 

Its first published botanical description dates back to 1780 and the scientific name attributed to it comes from the union of the Greek words Διός, (genitive of Zeus, God) and πυρός (wheat), literally "wheat of Zeus". The word persimmon, however, derives from the Japanesepronounced kaki .

Called the Apple of the East , it was defined by the Chinese as the Tree of the Seven Virtues :

  • It is very long-lived;
  • Provides plenty of shade;
  • It offers hospitality to the birds in its branches;
  • It is immune to parasite attacks;
  • Its leaves are decorative until fall;
  • Its wood is valuable and excellent for fire;
  • It manages to provide nourishment to the soil with the abundant fall of leaves and fruit drop.

In more recent times it was renamed the Tree of Peace, because some specimens miraculously managed to survive the atomic bomb in Nagasaki in 1945.

It has late flowering, around May, which protects it from the frosts of March and April, even if it is a very cold-resistant plant, so it can be grown almost anywhere. Its fruits reach maturity from mid-October to the end of December and are 97% edible. 

They are rich in mineral salts, vitamins, beta-carotene, potassium, magnesium, sodium and calcium. They are also very energetic, which is why they are particularly suitable for children, the elderly and sports lovers, provided they do not have a diabetic condition because they are very rich in glucose and fructose. Furthermore, the fruits boast laxative, diuretic and hepatoprotective properties.

Rewild dehydrated persimmons come from Italian organic cultivation and belong to the Ragno persimmon variety, among the most widespread and appreciated in our country.

They reach maturity on the tree , then they are collected, washed, cut into slices and finally dehydrated in a dryer at low temperatures.
